Ingredients

  • 1 to 1 Pancetta Use equal amounts as guanciale; milder and less fatty.
  • 1 to 1 Bacon Use equal amounts as guanciale; smokier and saltier.
  • 1.5 to 1 Prosciutto Use 1.5 times the amount and add oil to compensate for lack of fat.
  • 1 to 1 Lardons Use equal amounts; pure fat and rich but less sweet flavor.
  • 1.25 to 1 Smoked Tempeh Use 1.25 times the volume to replace guanciale in vegetarian dishes; smoky and no pork.

Method

  1. Choose a substitute based on the fat content and flavor profile your dish requires.
  2. If using pancetta or bacon, cook with the same quantity as guanciale and add olive oil if pan is dry.
  3. When using prosciutto, use 1.5 times the amount and add olive oil or butter for fat. Cook quickly over medium heat.
  4. For lardons, use equal parts and render slowly over medium-low heat to get a rich coating.
  5. For smoked tempeh, cube small and crisp in oil over high heat. Use about 1.25 times the volume and season with soy sauce.
  6. Taste and adjust seasoning carefully, especially with smoky or saltier substitutes like bacon and tempeh.

Notes

Add olive oil slowly when cooking prosciutto to prevent dryness and toughness.
