Ingredients

  • 1 tablespoon Corn Syrup Use 1 tablespoon per 1 tablespoon glycerin; slight corn flavor, prevents sugar crystals, keeps cakes moist
  • 0.75 tablespoon Honey Use ¾ tablespoon per 1 tablespoon glycerin; adds floral notes, best in spice cakes, not vegan
  • 1 tablespoon Maple Syrup Use 1:1 ratio; rich maple taste suits bold recipes, can darken batter
  • 1 tablespoon Agave Nectar Use 1:1 ratio; plant-based, fruity undertones, sweeter and thinner than glycerin
  • Oil + Sugar Syrup Mix 1 teaspoon vegetable oil with 2 teaspoon simple syrup per 1 tablespoon glycerin; blend thoroughly before use

Method

  1. Choose corn syrup for candy, frosting, and cake to closely mimic glycerin’s properties.
  2. Use honey for moist baked goods with bold flavors; reduce amount to ¾ tablespoon per 1 tablespoon glycerin.
  3. Select maple syrup for recipes with strong complementary flavors; use equal amounts as glycerin.
  4. Use agave nectar for vegan recipes; substitute in equal parts but reduce other sugars slightly.
  5. Prepare oil and sugar syrup substitute by mixing 1 teaspoon vegetable oil and 2 teaspoon simple syrup per 1 tablespoon glycerin; blend well.
  6. Adjust other liquids in your recipe if your chosen substitute is thinner than glycerin to maintain consistency.
  7. Test the swap in small batches first to evaluate taste and texture before using in full recipes.

Notes

Blend oil + sugar syrup substitute thoroughly to prevent separation and maintain proper binding.
