Ingredients

  • 1 tablespoon Cornstarch + ½ teaspoon Vanilla Extract Use 1 tablespoon cornstarch mixed with ½ teaspoon vanilla extract per 1 tablespoon custard powder
  • 1 tablespoon Flour + ⅛ teaspoon Turmeric + ½ teaspoon Vanilla Extract Combine 1 tablespoon flour, ⅛ teaspoon turmeric, and ½ teaspoon vanilla extract per 1 tbsp
  • 1 tablespoon Arrowroot Powder + ½ teaspoon Vanilla Extract Use 1 tablespoon arrowroot powder with ½ teaspoon vanilla extract; add at end of cooking

  • 1 tablespoon Instant Vanilla Pudding Mix Use 1 tablespoon instant vanilla pudding mix per 1 tablespoon custard powder;

Method

  1. Select the substitute based on your recipe needs—texture, flavor, color, or dietary requirements.
  2. Mix dry starch or flour with vanilla extract (and sugar or turmeric if required) thoroughly before adding to your liquid.
  3. Use the substitute at a 1:1 ratio to custard powder, adjusting sweetness or seasoning as needed.
  4. For arrowroot, add it near the end of cooking to prevent breakdown and ensure proper thickening.
  5. Check the final texture and taste, and adjust vanilla or sweetness accordingly to achieve desired custard characteristics.

Notes

  • Most substitutes lack the classic yellow color of custard powder, except when turmeric is added.
  • Arrowroot is ideal for gluten-free recipes but should not be heated for long periods.
  • Instant pudding mix adds sugar and creates a firmer texture, suitable for cold-set desserts.
