Ingredients

  • 1 cup Cayenne Pepper Use 1:1 volume ratio for cooking substitutions
  • 0.75 cup Thai Bird's Eye Chili Use 75% volume of chile de arbol called for
  • DIY Blend (3 parts cayenne pepper to 1 part smoked paprika) Mix before use; replaces smoky depth
  • 0.5 cup Chipotle Powder Use half the volume; strong smoke, less heat
  • 1 cup Fresh Fresno Chili Use equal whole chili volume for fresh dishes

Method

  1. Choose the substitute based on your dish type: cayenne or DIY blend for smoky cooked dishes, Thai bird's eye for high heat, chipotle for deep smokiness, fresh Fresno for fresh salsas.
  2. Prep the substitute by grinding or mixing as needed; for the DIY blend, combine cayenne and smoked paprika in a 3:1 ratio.
  3. Apply the substitute using suggested ratios: 1:1 for cayenne, 75% volume for Thai bird's eye, half volume for chipotle powder, equal whole chili volume for fresh Fresno.
  4. Adjust seasoning and taste as you go, especially with hotter substitutes like Thai bird's eye chili.
  5. Use fresh Fresno chili last in fresh applications; avoid using fresh substitutes where dry heat and smoky flavor are essential.

Notes

  • Use cayenne pepper for a bright heat but note it lacks smoky depth.
  • Mix cayenne with smoked paprika to restore smokiness missing in cayenne alone.
  • Fresh chiles add texture but do not replicate dried chile de arbol's flavor profile.
