  3. For curries or purees, cooked lentils work well, offering a softer bite and earthier flavor.
  4. Use firm tofu as a soy-based protein substitute; press out excess water and season heavily before adding to dishes.
  5. For baking or thickening, use chickpea flour; toast it briefly to reduce raw taste and add gradually to recipes.
  6. Apply the recommended ratios: 1:1 for most substitutes, equal volume for tofu, and ½ cup flour per cup chickpeas.
  7. Adjust seasoning and texture after substituting, taste-testing to ensure flavors balance and consistency fits the dish.

Notes
