Cuisine: Mediterranean

Ingredients

  • 1 cup Nyon Olives Use 1:1 by volume; earthier and less buttery
  • 1 cup Manzanilla Olives Use 1:1 by volume; rinse if too salty
  • 1 cup Kalamata Olives Use 1:1 by volume chopped; stronger, fruity flavor
  • 1 cup Green Queen Olives Use 1:1 by volume; mildly bitter, stays firm
  • 1 tablespoon Chopped Green Olives Mix with ¼ teaspoon softened butter to mimic buttery richness
  • 0.25 teaspoon Softened Butter Mix with 1 tablespoon chopped green olives to mimic buttery richness

Method

  1. Select the substitute based on your dish: Nyon or Manzanilla for fresh salads and antipasto, Kalamata for cooked dishes, Green Queen for salads and pizza, and Green Olive & Butter mix for spreads.
  2. If olives taste too salty, rinse them briefly before use.
  3. Chop Kalamata olives finely to reduce their strong flavor dominance in dishes.
  4. Use substitutes at a 1:1 ratio by volume, except for Green Olive & Butter mix which is 1 tablespoon chopped olives plus ¼ teaspoon butter per tablespoon of Castelvetrano.
  5. Mix chopped green olives and softened butter thoroughly before adding to spreads or finishing dishes.
  6. Taste the dish after adding olives to adjust seasoning and ensure balance without overpowering flavors.

Notes

Rinse Manzanilla olives before use to prevent excess saltiness from overpowering your dish.
