5 Best Substitutes for Cabernet Sauvignon in French Cooking

5 Best Substitutes for Cabernet Sauvignon

No ratings yet
Choose Cabernet Sauvignon substitutes based on cooking method and desired tannin level. Merlot works 1:1 for similar acidity and body. Broth plus vinegar offers savory depth without alcohol. Juice-based swaps suit quick sauces, not long braises.

Ingredients

  • Merlot Use straight in any recipe calling for Cabernet, ratio 1:1, softer tannins and fruitier finish
  • 0.75 cup Beef broth Mix with ¼ cup red wine vinegar per cup of Cabernet for savory, less fruity swap
  • 0.25 cup Red wine vinegar Mix with ¾ cup beef broth per cup of Cabernet for savory, less fruity swap
  • 1 cup Pomegranate juice Use 1 cup juice plus 1 tablespoon balsamic vinegar per cup of Cabernet, fruity and tart
  • 1 tablespoon Balsamic vinegar Add to pomegranate juice for acidity and depth, ratio 1 cup juice to 1 tablespoon vinegar
  • 1 cup Cranberry concentrate Dilute 1:1 with water before use to moderate sharp acidity, add a splash at end of cooking
  • 1 cup Water Dilute cranberry concentrate 1:1 before use or mix with lemon and sugar for bright acid
  • 1 cup Water Use with 1 tablespoon lemon juice and 1 teaspoon sugar per cup of Cabernet, bright acid for quick deglazing
  • 1 tablespoon Lemon juice Add off heat to preserve brightness, mix with water and sugar for acidity
  • 1 teaspoon Sugar Balances lemon juice sharpness, omit if dish is already sweet

Method

  1. Select substitute based on recipe: Merlot for sauces and slow cooking with tannin, broth plus vinegar for savory cooking, fruit juices for quick sauces.
  2. If using Merlot, substitute directly 1:1 for Cabernet without adjustment; add black pepper for more bite if desired.
  3. For broth plus vinegar, mix ¾ cup beef broth with ¼ cup red wine vinegar per cup of wine being replaced.
  4. Combine 1 cup pomegranate juice with 1 tablespoon balsamic vinegar for a fruity, tart substitute; adjust salt to balance sweetness.
  5. Dilute cranberry concentrate 1:1 with water; add near end of cooking to maintain brightness and add soy sauce if savory depth is needed.
  6. Mix 1 cup water with 1 tablespoon lemon juice and 1 teaspoon sugar; add lemon juice off heat and use for quick deglazing, not braising.
  7. Taste and adjust the substitution if needed by adding a pinch of salt, sugar, or black pepper according to dish requirements.

Notes

Dilute cranberry concentrate before use to prevent overpowering sharpness in sauces and marinades.
