Ingredients

  • 1 Shiitake Mushrooms Soak in warm water 20 minutes before use; use 1 dried shiitake per 1 tablespoon bonito flakes. Pour soaking liquid into broth for extra umami.
  • 1 tablespoon Smoked Seaweed Blend Mix 1 tablespoon smoked seaweed blend per 1 tablespoon bonito flakes. Toast nori sheets lightly and crumble with dried kombu for best flavor.
  • 1 teaspoon Anchovy Paste Use 1 teaspoon anchovy paste per 1 tablespoon bonito flakes. Start with half and taste before adding more to avoid overpowering flavors.
  • 1 teaspoon Miso Paste Use 1 teaspoon miso paste per 1 tablespoon bonito flakes. Dissolve in warm broth before adding to avoid lumps and add after removing from heat.
  • 1 tablespoon Soy Sauce Mix Mix 1 tablespoon soy sauce with ¼ teaspoon liquid smoke to replace 1 tablespoon bonito flakes. Liquid only, no texture. Adjust salt accordingly.

Method

  1. Identify your recipe’s core need: smoky flavor, umami depth, or texture.
  2. For vegetarian broths needing rich umami, soak shiitake mushrooms 20 minutes and use with the soaking liquid at a 1:1 ratio to bonito flakes.
  3. To add smoky marine flavor, toast nori and crumble with kombu; simmer the smoked seaweed blend 5–8 minutes and strain before using.
  4. Use anchovy paste sparingly in sauces or soups, stirring it in warm liquids near the end of cooking; start with half teaspoon per tablespoon bonito flakes.
  5. Add miso paste dissolved in warm broth after removing soup from heat to add fermented umami without smokiness; use 1 teaspoon per tablespoon bonito flakes.
  6. Combine soy sauce and liquid smoke for a quick savory-smoky boost in liquids; start with 1 tablespoon soy sauce plus ¼ teaspoon liquid smoke and adjust to taste.
  7. Adjust all substitutes by tasting and balancing salt, smoke, or umami intensity as needed for your dish.

Notes

Soak shiitake mushrooms before using and pour off soaking liquid to prevent gritty or weak broth flavor.
