Ingredients

  • 1 to Chuck Roast Use 1:1 ratio by weight. Cut into steak-sized portions and braise for at least two hours.
  • 1 to Skirt Steak Use 1:1 ratio by weight. Best cooked screaming hot and fast, sear 2–3 minutes per side.
  • 1 to Flat Iron Steak Use 1:1 ratio by weight. Tender, mild, sears well with removed center tendon.
  • 1 to Top Sirloin Use 1:1 ratio by weight. Lean, roasts nicely; pull at 130°F internal for medium-rare.
  • 1 to Beef Brisket Use 1:1 ratio by weight. Fatty, needs 3–4 hours low heat to tenderize.

Method

  1. Choose your substitute based on the cooking method: use skirt or flat iron for quick high heat, chuck roast or brisket for low and slow.
  2. For chuck roast, cut into steak-sized portions and braise at least two hours until collagen melts into the sauce.
  3. For skirt steak, sear over high heat 2–3 minutes per side, rest 5 minutes, then slice thin against the grain.
  4. For flat iron steak, sear well and keep cooking quick to preserve tenderness; avoid slow braising.
  5. For top sirloin, roast or grill thick steaks to medium, and pull from heat at 130°F internal temperature.
  6. For beef brisket, cook low and slow for 3–4 hours minimum with fat cap facing up to baste meat.
  7. Adjust ratios 1:1 by weight for all substitutes, and ensure cooking time matches cut toughness and cooking method.
  8. Taste-test throughout to ensure desired tenderness and flavor balance.

Notes

Slice skirt steak thin against the grain to prevent stringy, chewy bites during quick cooking.
