Ingredients

  • 1 piece Ti Leaf Use same-size pieces as banana leaf; heat-resistant and flexible with mildly herbal aroma
  • Pandan Leaf Use 2-3 leaves per banana leaf piece; narrow leaves best as liners to add aroma,
  • 1 piece Corn Husks Use same-size husks as banana leaf; soak dried husks in warm water for 10-15 minutes
  • 1-1.5 leaves Cabbage Leaves Blanch briefly in boiling water before wrapping; pliable but add no aroma
  • 1 piece Aluminum Foil Use equal-sized foil squares as banana leaf pieces; no flavor added but traps moisture well

Method

  1. Choose the substitute based on your recipe needs: Ti leaf for similar wrapping, pandan for aroma liners, corn husks for tamales, cabbage for steaming, or foil for moisture trapping.
  2. Prepare the substitute: rinse ti and pandan leaves; soak corn husks for 10-15 minutes; blanch cabbage leaves briefly; no prep needed for foil.
  3. Use recommended ratios: 1:1 for Ti leaf, corn husks, and foil; 2-3 pandan leaves per banana leaf piece; 1 to 1.5 cabbage leaves per banana leaf piece.
  4. Wrap or layer food according to substitute flexibility—pandan as liner only; others as full wraps.
  5. Check the wrapped parcels for tightness and adjust if needed to prevent leaking during steaming or grilling.

Notes

  • Ti leaf is the closest functional match with heat resistance and flexibility.
  • Pandan leaves add aroma but are too narrow for wrapping.
  • Foil is a convenient neutral option but lacks natural aroma and presentation.
