Ingredients

  • 1 pound ground turkey (93% lean) Avoid extra-lean (99%) to keep moist
  • 2 eggs
  • ½ cup carrots shredded or finely pulsed
  • ½ cup celery finely pulsed
  • ½ cup onion finely pulsed; yellow or white work best
  • ¼ cup bell pepper any color, finely pulsed
  • ½ cup breadcrumbs panko or regular, soaked in milk
  • ¼ cup milk to soak breadcrumbs
  • ¼ cup ketchup thick brand for glaze adhesion
  • 2 tablespoons brown sugar for glaze
  • 1 teaspoon mustard for glaze
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder

Equipment

  • Oven Preheat to 350°F for baking the meatloaf
  • Baking sheet Lined with parchment paper to prevent sticking and ease cleanup
  • Food processor For pulsing vegetables finely without mushiness
  • Mixing bowl To combine meatloaf ingredients
  • Instant-read thermometer To check internal temperature for doneness
  • Small bowl For whisking glaze ingredients

Method

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Pulse the carrots, celery, onion, and bell pepper in a food processor until finely chopped but not mushy, about pea-sized pieces.
  3. In a large bowl, mix the breadcrumbs and milk and let sit for 2 minutes to absorb moisture and form a panade.
  4. Add the ground turkey, eggs, pulsed vegetables, salt, pepper, and garlic powder to the bowl. Mix gently with your hands until just combined.
  5. Shape the mixture into a loaf about 8 inches long, 4 inches wide, and 2 inches high on the prepared baking sheet. Bake for 40 minutes.
  6. Meanwhile, whisk together ketchup, brown sugar, and mustard in a small bowl to make the glaze.
  7. Brush the glaze over the meatloaf and return it to the oven for an additional 15 minutes.
  8. Check that the internal temperature reaches 165°F with an instant-read thermometer. Rest the loaf for 10 minutes before slicing so the juices redistribute and slices hold together cleanly.

Notes

Mix vegetables gently with meat to avoid toughness and maintain moisture.
