  • 1 package cheese tortellini fresh or frozen
  • 1 onion diced small
  • 3 cloves garlic minced
  • 28 ounce crushed tomatoes one 28-ounce can
  • ½ cup heavy cream add off heat to prevent curdling
  • 2 tablespoons olive oil
  • ½ cup Parmesan cheese grated fresh

Equipment

  • Large skillet For cooking tortellini and sauce together

Method

  1. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add diced onion and cook for 5 minutes until softened and translucent, stirring occasionally.
  2. Add minced garlic and cook for 30 seconds until fragrant, stirring constantly to avoid burning.
  3. Pour in one 28-ounce can of crushed tomatoes and bring to a simmer. Add the tortellini, stir to coat, and cover the skillet. Cook 7-9 minutes for frozen, or 3-5 minutes for fresh tortellini, stirring halfway through.
  4. Remove the skillet from heat and stir in ½ cup heavy cream until sauce is smooth and pale orange. Add ½ cup grated Parmesan and stir until melted.
  5. Taste and adjust seasoning with salt and black pepper. Tear fresh basil leaves over the top and serve directly from the skillet.
