Ingredients

  • 16 Medjool dates pitted, torn into smaller pieces
  • 1 cup rolled oats old-fashioned preferred
  • ½ cup natural nut butter peanut or almond butter, mixed oil
  • ¼ cup unsweetened shredded coconut
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract pure vanilla preferred
  • 1 tablespoon chia seeds optional
  • ¼ teaspoon sea salt optional
  • ¼ cup mini chocolate chips optional, fold in after processing

Equipment

  • Food processor To blend dates and mix ingredients
  • Bowl To chill the mixture
  • Plate Parchment-lined for rolling bites

Method

  1. Pulse the Medjool dates in a food processor until they form a sticky paste, stopping once or twice to scrape down the sides for even blending.
  2. Add rolled oats, unsweetened cocoa powder, shredded coconut, natural nut butter, and vanilla extract to the processor.
  3. Pulse in short bursts about 10 to 15 times until the mixture clumps together when pinched.
  4. Transfer the mixture to a bowl and chill in the fridge for 30 minutes to firm up the dates and nut butter.
  5. Roll the chilled mixture into 1-inch balls using slightly damp hands. If the mixture sticks, dampen palms or lightly oil with coconut oil.
  6. Arrange the bites on a parchment-lined plate and chill for an additional 15 minutes before eating or storing.

Notes

Chill the mixture for 30 minutes before rolling to ensure bites hold shape and do not stick to your hands.
