Ingredients

  • 4 white fish fillets about one inch thick, skinless (cod, tilapia, haddock, or halibut)
  • 2 tablespoons fresh lemon juice about per pound of fish
  • 2 tablespoons olive oil to coat fillets
  • 2 cloves garlic minced
  • 2 tablespoons fresh herbs parsley, dill, or thyme, chopped; divide for before and after baking
  • salt and pepper to taste, season both sides
  • 1 teaspoon lemon zest optional, grated over fillets before roasting

Equipment

  • Baking sheet Line with parchment paper for easy cleanup and even cooking
  • Small bowl To mix olive oil, lemon juice, and garlic

Method

  1. Preheat oven to 425°F and line a baking sheet with parchment.
  2. Pat the fish fillets completely dry with paper towels to promote browning and prevent steaming.
  3. Arrange the fillets in a single layer on the baking sheet with space between each piece.
  4. Mix olive oil, fresh lemon juice, and minced garlic in a small bowl.
  5. Drizzle the oil-lemon-garlic mixture evenly over both sides of the fish fillets.
  6. Season both sides with salt, pepper, and half of the chopped herbs, pressing gently so the seasoning sticks.
  7. Optional: Marinate the fillets in the oil-lemon mixture for 10 minutes before baking for deeper flavor.
  8. Roast uncovered for 10-12 minutes until the fish is opaque and flakes easily with a fork at the thickest part.
  9. Check the internal temperature with an instant-read thermometer; it should read 140-145°F at the center.
  10. Remove from oven, sprinkle remaining fresh herbs over the top, and let rest for 2 minutes to allow juices to redistribute.

Notes

Pat fish fillets completely dry before seasoning to prevent steaming and ensure they brown nicely during roasting.
